The identifying characteristic of insulin resistance is an elevation of blood glucose for a prolonged period of time. If my glucose rises to 120 (ie. from eating sweet potatoes pie ) , it will take a couple of days fasting to get down to 65. In insulin sensitive people, it will rise then fall rapidly. My 5 year old niece gets in ketosis after not eating for a few hours.
No one can tell you if half & half is spiking your glucose. The only way to know is to test yourself. Tracking glucose is a better indicator of energy status than ketones, because it is more sensitive. In my experience it’s also better correlated with weight loss.
Lipolysis is the burning of fat for energy. Ketosis is only one aspect, the one which happens to be measurable, which is why people obsess over it.
