I was strict keto for about 4 months but this last month - August - I would cheat on weekends and have carbs , weight only fluctuated 1 or 2 pounds here and there but now this week I went back to strict keto. I started Monday it is now Saturday and my weight has dropped 2 pounds , is this from water retention from carbs possibly and the bloating from carbs ?

You asked whether this was “water retention” or “bloating”. What do you think you’d be “bloated” with if not water?
The answer is yes: as your insulin spiked, you’ll have retained a shedload of water in the liver and other places. As your insulin dropped again, you urinated it out.
