USA road trip - help with meal planning

Yes, we’ll be driving down Highway 1 in California, and 101 in Oregon. We’ll spend some time in Seattle, San Francisco and San Diego. However, most of the time we’re going to be in very small towns between the cities and visiting some parks. We like big spaces, so mostly empty roads are exactly what we’re hoping for.
One of the advantages to living in Switzerland is that almost everywhere we visit is cheap in comparison From what I can see on the internet, fuel in the US is still much cheaper than over here. If I did my maths right, the last time I filled up here, I spent just under $9.50 per gallon ($2.40 per litre).
We are running around $4.50/gal here in Arkansas but I saw someone post they paid over $6 to fill up in California. Still cheaper than your gas!
But we drive much greater distances than you do in Switzerland. The nearest Walmart is almost an hour round trip. My dentist is an hour, 20 minute drive round trip. We had a couple of good coffee shops open up (30-min round trip) which is good because the nearest Starbucks in a 2-1/2 hour drive round trip. Of course there is other shopping so we don’t drive that far for coffee, but usually run through Starbucks when we are shopping in the larger towns.
If you like open spaces you would like where I live. I live on 47 acres (19 hectares) and have no sightline neighbors. The only noises I hear are some big trucks from the nearby highway, frogs, chickens squawking, and the occasional deer huffing at me.
I don’t know, open spaces are great to visit but I like living with my doctor and dentist nearby You’re right, we tend not to drive very far most of the time.
