I just recently bought her Ice Cream book, too. Had to round up some specialty ingredient items I didn’t have, since she was adamant about NOT substituting. One I could not find anywhere locally; found it on Amazon: powdered egg whites.

Also Guar gum, and powdered (not the usual crystallized version) of xylitol. If you own dogs, please note xylitol is very poisonous to them. So either be very careful, or skip this cookbook.

I haven’t made the recipes yet either. Eager to see how they turn out. I’ve been hunting for a really good not-rock-solid-hard-in-the-freezer keto/low carb/sugar free ice cream for years. :smile:

OOh, you may be further along than me!! I did round up some ingredients this weekend too, but what I really need is the damn ice cream maker!! so, I will get that and try with some of the easier ice creams. I saw some great reviews on IG about her ice creams, and another glowing review on another site.

I want to start with the cinnamon ice cream… Love cinnamon ice cream. :smile: :icecream:

I do have a dog, so definitely will not be letting him “lick the bowl” and I will also make sure he’s no where near me when I’m mixing with this stuff.

Keto is absolutely sustainable. And honestly, it’s a luxury to me. I enjoy the keto meals and keto desserts I make for myself. All of my food is flavorful and satisfying. And that was such a struggle with me. When I have tastes regular sweets for instance, they aren’t anything like how I remembered them to be. LOL and the side effects afterwards aren’t worth it. So, I’m good with having my ‘special diet’ as my associates say. :grin:

I figured out how to make keto candy I like BETTER than the high carb versions (ask me about a reeses peanut butter cup recipe I found a week ago).

This summer I’m buying guide an ice cream maker CUZ I DESERVE IT DAMMIT

…Last year I bought a deep fryer. Ask me what I put in there. Heh heh

After 3 years ketogenic there ain’t nuthin’ I can’t have if I ain’t lazy about it! And my ketofied versions of treats TASTE BETTER

And now I remember why I never bought one of Carrie’s cookbooks – she uses such strange ingredients I’ve practically never heard of. Maybe I should branch out in the name of ice cream. I also do not have an ice cream maker – details! At the moment I am on a spending diet, so I will continue to read about the ice cream you all make while I wait a while. Good to know about xylitol and dogs!! (I have four dogs)

Be warned. These are so good you’ll eat them till you’re sick (ask me how I know, lol).
I used a mini muffin tin to make reeses “cups”!

I love that you posted about this. Easter was tough for me this year. I’ve been on and off keto for about 5 years, including 3 keto pregnancies. I sometimes miss the old food, but find now that I crave the keto food because it’s real and tastes good.

I’m a busy mom, too, and I have to have dinner ready quickly or we’re having hot dogs for dinner. I found some casseroles on Pinterest that are my go to meals if I’m in a pinch. My “oh man I gotta make dinner because bedtime is in an hour” meal is frozen meatballs in homemade Alfredo sauce covered with cheese. Yummy, keto, and makes enough for leftovers.

I love a certain chocolate eggs and used to eat tons of it around Easter. In the past week I’ve been debating whether I should “treat” myself and pick some up. I am not craving them but I remember how much I loved them. I’ve been really strict with the keto way of eating since Jan 1 and I’ve made a lot of progress with my weight and carb cravings. If I start eating candy, I’ll probably start craving carbs…
I decided against chocolate eggs…bunless bacon cheeseburgers are more satisfying.

I am pretty well in line with everyone else. I just don’t really get the cravings any more. When I do, I tend to make an alternative or just do something completely different that is nice for me and not necessarily food. There are very few things that I do genuinely crave that would actually taste good anymore anyway. I also know exactly what happens if I do head that way and the carbs creep up - my depression and migraines come back with a bang - and it’s not worth it.

I do have a few things that I do occasionally that are off plan if you want to be brutal about it but actually are on my plan because they don’t send me into a downward spiral or anything like that. They also make this woe sustainable - for me. If I am out and mates have ordered chips and they are good chips (fries if you are American!), I will have a few. Yum! Happy with a few - genuinely! I go out to nice restos occasionally with a mate and I will either have a small bit of his dessert or eat a small bit of mine and leave (or usually give him!) the rest. I will also have some wine more often than not with the meal - luckily, my preference is dry and lights so that works. And that is the extent of my off plan forays really! Chances are TBH that the amounts I have fall just within the top end of a net carb range anyway as I usually opt for total.

Some people will go all out and have a carb day or whatever regularly once a month or even a week. That would be a total disaster for me - I would feel rubbish and probably wind up on a downward spiral for a while. It takes all sorts and only you can know (and find out by experimenting) what your sustainable is. Personally I also find carb creep has the same impact - so just little bits here and there, the sneaky ones!

Seeing the Easter candy this year was not as bad as I thought. I still wanted to eat some, but I’ve come this far. And I know if I have more carbs than I mean to, even with keto food, I’ll feel stiff in the morning. I could only imagine after a Reese’s and Cadbury egg bender… so I refrained, even when clearance was whispering to me…
