It does seem that 117 lbs for 5’5" woman is on the very, very bottom of normal weight range. Perhaps 117 was too thin and the 123 is a healthier weight?

Stop focusing on the scale and focus on your health. Sounds like it’s a healthy and necessary gain (I’m 5’ 3" and 117lbs).

I’d wager the carbs aren’t all that much and if if you aren’t having to forcefeed yourself the chicken (which I’m not a fan of personally since it’s so easy to overcook) then that may not be a problem either. Your body is just using the food to get to work making muscle and bone.

Stress reduction and sleep hygiene are big things that can bring cortisol down and let you heal as well. These things tend to get pushed aside with a large family.

Also, have you thought about restricting the feeding window? Even if you don’t change the amount of food you eat over the day, by eating it in a shorter window, you’ll fast a bit longer (bring down the area under the curve of insulin) and that can make a big difference as well.

Take measurements now! Because they’ll save your sanity when the scale doesn’t go down, yet you shrink. My wife has been mad that she’s been plateau’d for a couple months, yet she’s downsized clothes TWICE in those couple months! I’ve been lifting for about a year but now stepping it up a notch, so my weight is only gonna go UP now regardless of fat loss. SCREW the scale!
