Totally agree on the egg bites. They are delicious.

My favorite thing when I need something sweet is vanilla pot de creme substituting monk fruit sugar for the sugar in the recipe and adding a couple of berries or dark chocolate chips.

Sous vide is a game changer.

Maybe try double bagging next time. Keep it in the original package (if if comes vacuum sealed from the store) and then maybe put that inside a zip lock bag with all the air removed.

I never use the original bags. Not quite sure if the bags are actually ā€œsous vide-ableā€
It doesn’t take much time to trans to a sous vide bag.

I don’t think I would use the original packaging either. Especially since they like to put those little absorbent part plastic part cottony sort of material to suck up any of the meat juice.

Good point. They were not in these particular packages but I hadn’t thought of that before.
