I’m still a relative newbie (only been doing keto for ~1.5 months), but I have used them and I’m still on track. I think you just have to recognize/count the net carbs. I don’t think there’s any like sugar-alcohol/sweetener issues to worry about.

People also use sliced lunch meat as a wrap/tortilla. Obviously a totally different texture and taste but no carbs and holds fillings well when baking.
I used them to make chips and really liked the flavor and texture, but they do contain a lot of junk ingredients so I figure I’ll use them as a rare treat.
I’ve used these on occasion, but prefer to make my own when I can. I really like the Keto connect tortillas from their breakfast enchiladas recipe.
I’ve used them for several baked enchilada casserole type dishes. I use my own fillings and sauces. If you try these, just make sure to keep them separated by parchment paper until you’re ready to fill them.
Haven’t ever used them to make quesadillas, but I think I’ll give that a try next.
Store bought low carb tortilla that is REALLY legal?
Too often, I get a rise in blood sugar from the Mission Carb Balance Tortillas. I’ve sworn never to get them again several times.
I prefer Joseph’s Lavash Bread, and cut it up into bread-sized squares. They can be used for all kinds of things.
I’ve recently started making Cheesebuns. I’ve considered getting a tortilla press to easily flatten the “dough” out.
Are not those all net carbs? They are not sugars…
I was under the impression that you don’t count fiber as your daily limit. Also not sure that you count the other carbs as your body processes them differently than sugar.
Just trying to figure out your thoughts on it being 90% of your daily allowance, when we eat carbs (fibers) in every vegetable.

There are two schools of thought on this. I’m in the “total carbs” camp. Dr. Westman doesn’t care whether fiber, sugar alcohol, or what not. A carb is a carb is a carb. No more than 20 grams TOTAL. This approach greatly simplifies LCHF. I did the net carb thing years ago and backslid all the way back to normal, non-LCHF eating. I won’t make that mistake again.
I eat the HEB version. I don’t have any problems staying in ketosis. I check breath regularly and blood occasionally.
