deviled eggs are almost always my go to potluck dish. I put a slice of pickled jalapeno at the bottom of the hole and use the pickled jalapeno juice to thin out the yolk mixture. Bacon is optional (depending how much I like the people I’m eating with).
Ya I struggle with this too. I usually do a meat and cheese tray or veggies and dip. That’s the best I can come up with so far. Hope to get more ideas here!
Not a “recipe,” but people love a good layered salad – and if you put it in a clear glass bowl, it looks pretty impressive!
After the lettuce/spinach and brocolli and whatever other veggie layers you want to add, you can put a layer of boiled eggs, one of cheese, one of bacon or pepperoni or salami or whatever other meats you want to add. Top with a thick, mayo-based dressing and YUM!
Chicken wings.
In case someone doesn’t know about the magnificent baking powder fried chicken wing technique, this is it:
1 tbsp salt
2 tbsp baking powder
1 kg chicken wings (about 2 1/4 lbs for you metrically challenged)
Other seasoning to taste. The minimalist option:
1 tsp pepper
1 tsp paprika
I like paprika and chili so I do something like:
1 tsp pepper
2 tsp paprika
1 tsp chili powder
Coat the wings thoroughly in the seasoning mixture. Bake in the oven at 220C (425F) for 45-60 minutes, turning them every 15-20 minutes. They’ll look kinda dry and grey at first, but once the chicken fat gets rendered out and mixes with the baking powder the magic starts to happen. If there are still dry spots on some wings the second time you turn them feel free to borrow some grease from a neighboring wing. Total time can vary a bit, but it’s easy to see when they’re done because they’ll look deliciously brown and crispy.
For best results make sure the wings are properly thawed (so they bake nicely) and half-dry (so the seasoning will stick but not clump). Bake them on a wire rack on top of a baking sheet lined with aluminum foil to give a nice, even heat all around. The wings can be close together but they shouldn’t touch. It’s not a bad idea to coat the rack with some fat to prevent the skin from sticking, but as long as you’re careful the first time you turn them you should still be fine.
Serve them hot or cold, as is or coated in your favorite keto friendly wing sauce. One tip if you’re bringing sauced up wings to a potluck is to put them back in the oven for about 3-5 minutes after you’ve coated them in sauce to bake the sauce onto the wings and drastically reduce the stickiness. Just be sure you do it right away because if you let them cool down or put them in the fridge before reheating in the oven they are going to dry out.
Mine is a broccoli/cheese casserole. I took it to a very non-keto reunion and it was the only dish completely emptied at the end. Here are the ingredients.
Broccoli (I used frozen, boil until hot but still firm)
Cream cheese (3-ish oz?)
Cheddar cheese (1/2-1 cup shredded?)
Sour cream (1/2 cup?)
Onion pwdr
Chili pwdr
Salt
Pepper
I don’t measure when I cook it, so I apologize for that. I cook the broccoli and drain. soften the crm cheese in the microwave. Mix together crm cheese, sour cream, onion pwdr, chili pwdr, salt, and pepper. It will taste like an onion chip dip at thus point lol. Add a third of your cheddar to mix. Mix in with broccoli. Top with remaining cheese. Bake for 30 min at 350 degrees.
I’m not good at explaining the recipes I come up with while staring in my fridge, so I hope this made sense.
**This is for roughly 6 people. I made a much larger batch for the reunion.

It is! We have it a few times a week, because broccoli is one veggie we all ( we have 5 kids) agree on.
Cheesy cauliflower with bacon, bacon wrapped around asparagus or fresh green beans, pulled pork with keto BBQ sauce.
I made the cheese broccoli casserole today and it was great! Perfect side to the beef main dish I made. Now my head is full of ideas for variations, like bacon
We had a make-your-own-pizza party. We made a bunch of Fathead pizza crusts, then people could top them with a variety of toppings we had available, and we would bake them a couple at a time. Everyone loved them. Even better would be if we had a wood-fired brick oven. Maybe someday.
