But that could be endogenous cholesterol (saturated fats) from carbohydrates creating the gallstones not dietary saturated fats?

Now that makes sense more sense?

If it really worked the way they say it does, we would all be keeling over in pain from gallstones constantly?

You pretty much lost me there, Bunny. I really don’t know - it’s just that blaming “saturated fat” in our diets is, in my opinion, almost always false. At the least, there’s more to it than that - there are confounding things, genetic factors, other substances and hormonal responses to take into account, not just that “You’re eating too much saturated fat.”

Well, I certainly wasn’t eating much fat when I had gallstones. I was eating pretty much fat free, the way I was told to eat.

I was, however, in menopause with wildly fluctuating hormones that drove me batshit crazy. So I tend to look more towards the hormonal explanations.
