Blood work results are good, but need some help with raising HDL, advice please!

Looking back through my records, my HDL was below 40 at 6 months. A year later, it was near 50. Hit the mid 50s about 2.5 years after starting. It’s in the mid 50s now, though I haven’t had a test for over two years. (Getting one this week.) On my 10th year of keto.

Only got tests done infrequently, though, so it’s hard to gauge when things occurred.

In Australia supermarkets sell lard very cheaply but tallow is no longer available in supermarket chains. I found a good butcher who sells grass fed beef and most customers ask him to remove the fat, so he will give it to me and I plan to make my own tallow in a slow cooker.
I just bought a very small jar of it from the only butcher I could find that sold it and it was $39. For not much at all.

You’re lucky to have found that butcher! Grass finished beef is much leaner than corn-fed (which is part of the reason it’s not the common practice. corn = bulk = profit). When finding ‘grass finished tallow’ not only are we dealing with fewer individual animals, we’re dealing with leaner individual animals.
