Also I’m stayimg below 15g of carbs but I’m struggling to get my fat up to the 189g suggested and my proteins around 102g
Do you have any suggestions on how to up this and also what would be a quick sample menu to achieve this

If you aren’t hungry don’t worry about hitting your fat target. Fat is to keep you from being hungry and reaching for carbs in a moment of weakness.

And protein is just a guide - at this point in your journey if you are close you are ok.

The easiest way to add fat is to cook everything in butter and add butter to the top of hot things like a steak. For me I add butter and heave whipping cream to my coffee and use a small battery operated whisk to froth it all up.

Is she able to get enough sleep? That is very important for weight loss and health as well. Not getting enough sleep is shown to cause hunger and weight gain.
That is a really rough schedule.

What do you like to eat that isn’t carby?

Some of my go-to foods…

Eggs (scrambled, fried, poached, egg salad)
Bacon
Avocados
Hamburger patties with melted cheese on top
Zoodles (spiral zucchini sautéed in butter, garlic and onion)
Low carb tortillas filled with any of the above
Ham wrapped around some cheese w/mustard
BBQ cheese chicken (sugar free sauce)

Gotta get back to work. Will add more later.
