Hello, it’s me again. I won’t bore you anymore whey these steak (beef) and eggs posts. But I’ve to say…this simplifies life drastically.
What did you Keto today?
I have a keto ice cream cook book that I use. I’ll add the link to purchase it since its much easier to follow the recipe in the book for this flavor as well as to make the sugar free marshmallows. Plus you will get about 49 more awesome flavors to make! There is a physical book you can get and an e-book version.
Boursin and ham stuffed chicken breasts, breaded in Parmesan. Side of brussel sprouts and bacon broiled in bacon fat. Realized I still don’t like brussel sprouts!
Oh and some toast for breakfast! Yummmm
Had the best time making CH pizza with my new Keto friend Davi!
I’ve previously tried making it at home before, & while tasty, the crust hadn’t been quite right (too thick). But as they say, “see one, do one, teach one”, so I was assisting Davi with his first attempt we channeled our inner Carl/Richard, & took it up a notch. Roasted the garlic, carmelized the onions with shallots, brushed the dough with a delicious roasted garlic-infused Colavita EVOO, Rao’s sauce…along with cubed chicken breast & parsley. Next time will be able to plan ahead to have other herbs available (fresh basil?). It helped that we had the CH pizza at Daddy Jack’s in New London during Ketofest to see what a real version was supposed to taste like.
A special shout out to Davi’s wife, Lindsey, who helped avert a “cream cheese emergency” by graciously returning to the store to grab some extra bricks.
OMG, it was garlicious! It got a slightly mixed review from the Muggles (non-keto peeps), but the 4 yr old & grandmother seemed to enjoy it. And I can safely say it was the best CH pizza I ever had! I felt sorry for the poor family member who had a nut allergy, & was watching with sad eyes as the rest of folks ate the pizza …wondering if there is some leeway to try making the crust with coconut flour instead, which she can have?
All in all, a thoroughly enjoyable experience. Cooking keto is definitely more fun with friends!
I mix unsweetened unflavored almond milk with HWC and it’s very good for my espresso. I’m still a noob though. This is my 4th day on the journey and I just came to drool over all the lovely food porn. So many yummy looking things in this thread!
@tle77070 I get these thick, fatty cuts from Sam’s Club.
season with salt and pepper, vacuum seal 3 slices to a bag and cook Sous Vide at 131 degrees for 12 to 24 hours. They come out very tender with buttery steak like texture
Chill and store, while still in the vacuum sealed bag, in the refrigerator until needed.
When ready to eat, wipe dry and sear in pan, or quick grill over charcoal and and and EAT.
Sous Vide and Keto, match made in fat heaven.
Weirdest dinner ever - but it was delicious! 2 soft-boiled eggs halved with melted Brie atop, and mashed cauliflower. No meat tonight which is unusual, but I’m no longer hungry. Didn’t think a photo was in order, it was definitely a “beige” meal.
Finally broke down and looked up “sous vide” since I couldn’t figure out what it was even after reading many posts the past couple of weeks…sounds intriguing!
Interesting…this might be the first time I have ever seen anyone do this. How’d it turn out?
Can you at least divulge what sweeteners she uses? Think I may purchase this for my husband since he has the sweet tooth (and LOVES ice cream).
